Vegetarian Spaghetti

Now who doesn’t love spaghetti?  Thankfully, this meal has a good amount of lycopene. Lycopene has been considered a potential agent for the prevention of some types of cancers. On top of the tomato goodness, I have added mushrooms, green pepper, onion, garlic, Italian seasoning, Himalayan salt, freshly ground pepper, fresh basil and a drizzle of olive oil in this vegetarian spaghetti recipe, so you won’t miss the meat.

Cream of Broccoli & Cauliflower Soup

It was a chilly evening yesterday. My husband covered our garden plants for fear of  frost. It’s mid May here in Maryland, and the temperature has dropped to 32 degrees. As always, when it’s cold outside, I’m thinking soup.  A warm cup of cream of broccoli & cauliflower soup will do the trick to warm us up in the meantime.
