Spicy Peanut Buckwheat Soba

This spicy peanut buckwheat soba dish has a few distinctive sides to it. It is amazingly creamy and flavorful.  It has some kick to it while being refreshing at the same time. The noodles are tossed with a sweet fiery ginger-peanut-coconut-lime sauce and a generous amount of carrots, cabbage, cucumber, scallions, and pan-seared shitake or white mushrooms.
