I’ve heard many times the hardest part of going vegan is giving up the cheese.  Of course now there are all sorts of non-dairy cheeses, but I usually try to avoid them because their ingredient list is often pretty long and usually oil is high on the list.  Cheese has that gooey, salty, fattiness that humans just naturally find hard to resist.  I’ve also heard that milk contains casomorphins, little protein fragments that bind to our morphine receptors and addict us to the stuff.  Whatever the case may be, creamy and cheesy soups are typically something that are unhealthy in both the vegan and non-vegan realm.  That is until today.  This vegan broccoli cheddar soup utilizes whole plant based foods and still manages to register high on the cheesy-o-meter, mainly from the use of potatoes, nutritional yeast, and a half cup of homemade cashew cream cheese.  So if you can’t kick the addiction, give this recipe a go and see if it doesn’t whet that craving for creaminess.

Kelp Noodle Soup

Often times, it’s best to get things straight from the source, or at least as near to the source as possible.  That’s why locally grown vegetables are more desired than those transported halfway around the world.  Not only do they tend to have less impact on the environment, but they’re often more nutritious and fresher.  Most folks believe that fish is healthiest of meats, but most don’t connect the dots and realize that the source of all that nutrition is the sea veggies those fish eat.

Hosting

Whew, what a busy weekend!  Middletown High School put on a wonderful performance of “The Sound of Music”, and my son wound up being cast as Captain Von Trapp.  As a result, I wound up hosting different groups of aunts, uncles, grandparents, great grandparents, and cousins on Friday, Saturday, and Sunday.  I wanted to make sure everyone came away knowing how delicious a healthy vegan meal could be, so I put of effort into creating great tasting family friendly meals.  Here are a few of the dishes and some video clips for you to enjoy as well.

Butternut Squash Soup

It’s that time of the year again, transitioning from summer into fall: the cool weather; the mums blooming; the leaves beginning to change colors; and pumpkins, gourds, and squash galore.  After receiving a beautiful butternut squash from the Seed of Life CSA,  a hearty butternut squash soup was a moral imperative.
