These raw superfood energy bars are amazing.  Enjoy them for breakfast, for dessert, or as a quick pick me up. When I saw them, I thought they’d be like a lot of the previous bars I’d had.  Many times bars like these don’t provide a cohesive bite, meaning they seem like a lot of good components put together that don’t quite come together.  These bars are the most cohesive I’ve tasted, and believe me I’ve tasted a lot. They are decadent and delicious.  Okay, enough fawning.  I just wanted to add that the recipe is courtesy of Jennifer Kelly from Feeding Your Life blog. Thanks for the recipe, Jennifer. 1 cup rolled oats (gf)
1/2 cup shredded unsweetened coconut
1/2 cup hemp seeds
1/2 cup raw cacao nibs
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/2 cup goji berries
1 tbsp ground chia seeds
1/4 cup raw almonds
1/4 cup almond butter
1/4 cup coconut oil
1/4 cup raw honey or coconut nectar

How to:

Mix the dry ingredients. Combine with the wet ingredients. Spread on a large shallow pan lined with parchment paper. Freeze until firm. Slice into bars. Store in a container with lid. Best stored in freezer.
