I love the taste of mint around Christmas because of that frosty feel you get when you take a bite. These minty bites are like a proverbial blizzard in your mouth. You literally feel like you could exhale super frosty breath, kinda like in those super hero movies. Of course, that’s not really the case, but you definitely do have super good breath after you eat them, so that’s not a bad thing. Pro’s: taste great, healthy, chocolates, minty, good breath. Con’s: no freezey breath super power. Give them a shot for now, and I’ll repost once I get the super freezey breath thing going.



Chocolate Peppermint Bites

  1. 1 cup walnuts
  2. 1 1/2 cup medjool dates, pitted
  3. 3 tablespoons cacao powder
  4. 1/2 cup vegan chocolate chips
  5. 1/2 teaspoon pure vanilla
  6. 1/2 teaspoon peppermint extract
  7. 1/8 teaspoon real salt
Chocolate dipping sauce
  1. 1/2 cup vegan chocolate chips
  2. 1 teaspoon refined coconut oil
  1. In a food processor combine all the ingredients except the chocolate chips. Process for a few minutes until a dough like consistency is achieved.
  2. Add the chocolate chips to the processor. Pulse until the chocolate chip pieces are broken into small pieces. Roll into equal size balls and set in fridge while you work on the chocolate covering.
  3. Using a double boiler (one pot full of water and smaller pot inside it for melting) over low heat, melt the vegan chocolate chips. Stir in the coconut oil.
  4. Dip each ball into the chocolate and place on a dish with wax paper. Sprinkle with crushed organic candy canes. Chill in fridge until set.
  5. Enjoy!
